It all matters on your economical state.
But if I were you, I would go with the 2nd build because money is not a problem.

Hrm I shaved the price of the second build by replacing the quadro with a 6970, and added a monitor. Even without the bundle deal it's still cheaper. I hear the quadro isn't fast enough for gaming anyway, it's only good at massive amounts of ram usage.
End result:
Any suggestions for a keyboard would be nice, I already have decent mouse.

You can shave off alot more though, if you're not too picky on memory, PSU and case.
For your keyboard, what are your requirements? Macros, mechanical, fancy LCD gimmicks, etc... A $10 keyboard works just as well as a $100 one, but I'm guessing that's not what you'll want. Personally though, I'd go for mechanical keyboards, MX Brown switches. The mechanical action feels more comfortable than standard robber domes and cross-springs.
