It says the following listed under specs;
Expansion Slot(s): 1 processor, Socket AM3 , 4 memory, DIMM 240-pin , 1 PCI Express 2.0 x16 ( CrossFireX: x8, x8 mode; single card: x16 mode ) , 2 PCI Express x1 , 2 PCI
Does this mean I could(hypothetically) fit another 5870 in there, and crossfire?

Yep. Your current 5870 runs at x16. If you were to put another one in there, they'd both run at x8, which is perfectly fine as x8 has plenty of bandwidth already.

So it has 3 slots for GPUs like 1 PCI express and 2 regular PCI?
What's the difference between the two?

The new types of slots you see these days are called PCI Express* it's abbreviated into PCIe.
They include from the longest x16 to the shortest x1
Video cards will use the longest of the bunch which is x16 while other devices will use shorter types like x1

Total in all, they are 4 PCIe slot types
x16,x8,x4, and x1.

PCIe slots will fit any card that's its correct size or smaller.
For example if you have a network which uses PCIe x1. You can insert this card into any PCIe slot as you wish. But if you have a Video card that which uses PCIe x16, you can only insert into the PCIe x16 slot and not the others as they're too small so if won't fit.

PCI are from the old school days as they have been around for a long time. Some boards will still have it as user still have cards which uses it.

*Another type of slot similar to the PCI but a bit longer are also called PCI Express. This type of slot is known as PCI-X not PCIe.

It would be nice to get a straight-out honest answer. Can I crossfire 2 5870s on this mobo?

The question I've answer to you is what is the difference between PCI and PCIe and not whether you can XFire them.

Anyway you can, but what is your screen size.

1280 x 1080 getting a 21.5'' screen soon then it will be 1920 x 1080.
So there is space for two 5870 cards?

Yes you can xfire them, but I don't see the point of it. A single hd5870 is plenty for your needs.
