For one thing. Unless you plan to triple SLI, you don't need a board with 3 x16 pcie.

Well for one, you're hardly going to be able to fit those power supply cables in a matx desktop. You're also not going to be able to fit any decent graphics card in either. And even if you somehow manage to (which you won't, like really you won't), all that compacted stuff is gonna overheat, and then you're going to have a dense, melted thing of metal and plastic.
Don't do matx.

Well, i was gonna use a mid-tower for it, but if i shouldn't use matx, could you give me a few motherboards that are nice? The ones iv found were too pricey.

Bullshit on most parts.
Antec p180 series, look for it OP, it has enough room to fit everything.
and yes, the cable management and airflow is superb. If plastic melt in the condition you describe, i'll post a picture of my dick with arctic silver on top.,
maybe not arctic silver, i'll probably shove ram stick out my mouth
The only difference between m-atx and ATX is that ATX offers moar features and shits are more spread out. If you are building a lan rig or need space, m-atx is nice if you pick the right case.
ps: bottom mounted psu would need cable 8pin/24pin extension if you want neat cable management for better airflow.
you can use cheap OCZ ram if you trust their rebates (after long time)
power supply can be swap with cheaper ones, Antec Earthwatts, OCZ modxsteam (modular, easy cable mangement),
i7 offers little to none performance over the i5, so might consider that.
[also, newegg has been shipping fake intel CPUs, besure to check the package before you sign it]

So unless you have a matx case that is the size of a normal atx case, yeah...
Besides, why bother going with matx and making it a lot harder on yourself when you can just easily go with atx. Although I love that PSU to death, it is annoying as fuck with the hueg cables. Even on an atx case, that PSU just clogs the entire thing up. I jammed all the cables I didn't use in the disk drive and hard drive bays, which filled up the entire thing.
Yes, you could possibly accomplish a matx build, but why? There's no point. Unless you are trying to fit it in a cabinet that is 1 foot tall, why bother? It's just going to make your job harder.

Cable management are serious business, route the cable to the back, it should be perfect length, there is no way it can be too long, only too short.
There is never too much cables actually this is a lie, 4890 xfire + 4 hard drives is way too much , if you hate all those cable so much, there is a modular for that.
matx -> lan rig, carrying a CM Scout to any convention is fucking impossible, the case it self is already heavy as fuck. mATX boards are usually cheaper but with less functions, -> less eco footprint, goes the same with mATX cases.
what effort? Unless you have a very shitty case or don't know how to sort cables, mATX and standard atx cable management itself is nearly same, just bigger. the p180 itself its big for a mATX case.
Who knows, space mean a lot to some people, not everyone lives with their parent and have a hueg house. Apts and dorm are small you know.
tl;dr
It's up to OP if he needs a mATX setup or not, all the posts on the mATX vs ATX are merely opinions

Oh.. I kinda wanted a bigger case. I guess ill go with a full/mid-tower case. Could you help me find a good mobo around 60-120$? DDR3 w/ i7 Compatabilities. 1 or 2 PCI expresses.. doesn't matter much.

Wow im hearing so many different things.. if a matx does fit in a mid-tower, ill just get a matx mobo w/ a mid-tower. Since theres not that big of a difference, i dont really mind.
