Server sided means that the game server handles the value of the given thing. If your health is server sided, it means the only thing you can edit is the visual health that you have on your client. Any change you make will not effect your actual HP which is why you will still die even though your screen shows you at full health.
You mentioned this is online, so in almost all online games, things like Health and such are handled by the server, which you wont be able to hack.

Actually most online games don't have the server control health until later on, not trying to show you up but for people in the future.

Lol...? Almost all online games handle things like that on the server.
- Health
- Mana / Magic
- SP (for special moves)
- Timers for dungeons / skills / spells / etc.
The list goes on. The majority of online games have very little handled by the client. The most common thing that is usually hackable is your coords / speed as syncing with the server for every player causes dramatic lag for players as the CPU is trying to keep track of everyone.
Shitty programmed games that are free might be handled by the client in the fact that it is either poorly designed or the game wasn't made for online play, or has online + offline play.
I have seen 1? game that allows the client to handle such data due to using the same character data online as well as offline, which was Phantasy Star Online.

He could do what people did on the old darkeden, where you recorded getting healed, but miss god mode is only on games where you become invulnerable when your hit.
