If anyone knows if it's possible to make a bot with CE, i'd like to know. I'm only searching for something that can do simple keystrokes and detect and read information which CE gets from an address or two. Also if possible (not as important/necessary) i'd like to know if I can code prediction of
angles/trajectories.

Everything is possible within CE, I would highly recommend just using CE to find your offsets/aobs and using a programming language to do the coding.
If you want something easier than a programming language then try autoit or autohotkey.
If CE is your only option, you can put the entire code in the lua cheat engine table and it will run no problem. If you are a glutton for punishment, you can even code it entirely as an ASM script.
If you dont know how to program angles and trajectories, you are going to have a hard time making a bot for the first time, but its just math, so you can do it.
Pick your poison, ASM, LUA, python, c, c#, c+, java, they all can be used to write a bot.

Out of the three I have chosen which is easiest: LUA, python, C+

What is easy for me isnt easy for you, which is easiest to you is what will help you the most.
I wouldnt code in any of them, but if i had to pick from your list, lua would work fine, otherwise python for its super easy to useness, c++/c# is common because you can get pretty advanced tools for free
