How to find them? advices?

in some games you may found it close to the XYZ coords addresses, try find XYZ structure and then dissect close to it and see if there are any value that looks like a gravity variable

For speed I search 0 when still, then increased when running, decreased when walking, etc.

Gravity is easier if it actually varies in-game, otherwise you may need to find what's constantly pulling down your Y/Z.
