Once the health value is changed by C.E., the player dies (anti-hack protection). This is an online game, very simple, from 2004. Is there any way to avoid this?

If the server is syncing the value with the client, it is more than likely not possible. Since the client has a copy of the value the server will always have a protected version of the value to compare against. Perhaps look for an exploit instead of just raw-changing your health. Something like:
- Using an ability to heal yourself even though you shouldn't be able to.
- Using an item faster then expected, or an item you don't even have.
- Warping to a locating that may heal you.
- Altering health regeneration functions if there is one, to heal you for more.
