Because it's not unfinished. It's not in the alpha stage of development, nor is it in the beta stage. Cube World is far from completed, and so was Minecraft when it was in Alpha.

Maplestory is completed you daft child... every feature works.
Cube World has like 30 planned+large features. Plus it's buggy as hell. Maplestory's bugs are all rather difficult to come across and most of the bugs are only a result of an update.
I'd rather someone else explain this to you though because I'm terrible at explaining things. Especially explaining things to people with the mentality of a 10 year old.
The Alpha stage is the process of completing core mechanics (to my understanding). Beta is the stage of fixing or improving upon those mechanics (to my understanding). A completed game is completed... nothing else is needed. However, content updates can be provided to keep users interested, which is rather important for games like Moople. These updates can bring up more bugs though, thus constant attention is required.

if the game is OPEN INSTANTLY TO ANYONE WHO BUYS IT, then the game has been fully released
it isn't a "beta", or a fucking "alpha"
also, out of curiosity, i didnt stick around cw much, where was it stated that cw is now currently in a beta/alpha stage?

From SE/ISO standard point of view, alpha stage is about internal testing (not ready to be tested by the customer(s)), while beta stage allows managed testing by the customer.
From the developers point of view, apparently alpha is understood to be 'lacking planned features' which mean 'updates result in fundamental changes in the product' (which in gaming terms mean you have to relearn it all, as your previous knowledge is now counter-productive). In this case beta stage is understood as balancing/bug fixing existing features.
Please note that weekly/bi-weekly/half year updates do not put the game in alpha stage, even though they do add completely new content (that was not planned for release); sure, you have to learn the new features, but not the game from the ground up.
tl;dr
Devs change the meaning of these stages to whatever suits them best.

Alpha means that all intended features for release are implemented and working, to an extent. Beta means there are no faults with any features, but the game may lack polish and fine tuning(but there are a few stages of beta). From what I'm reading, cubeworld isn't even alpha yet.
