LaTeX standardises fonts, spacings, etc. Almost all technical papers are written in LaTeX and many lecturers will use it to write their slides. One common class used for presentations is Beamer. When you write your thesis, you will most likely use LaTeX to write it. After using it a bit, you'll be able to recognise just how widely LaTeX is used (particularly in the academic world).

LaTeX does the typesetting, but couldn't he easily just decide to use the same font anyways? As far as I know, theres tons of LaTeX font modules available (not sure if LaTeX support system fonts). Thus, the way I see it, it would fix a typesetting problem, but not the problem of poor font choice.

Generally people don't use custom fonts if they use LaTeX. XeTeX is more commonly used for more custom typefacing. Otherwise the default is Computer Modern.
For example, this probably looks familiar:

Yeah, I started using LaTeX a bit before. never could make it produce legible SVGs though, it would just end up as a bunch of text piled up on each other.

I used the Tex Live package when I still had a computer.
Just noticed that you were linking me to the cornell archive site, and not a LaTeX package, my bad. Not sure what you mean by getting acquainted with the site, I've seen it and read some article on there, and yes I know they use LaTeX.
