I used a program called DiskAid a while back to do it. Pirate it and you can take everything off it (videos, music, messages)

I'm not a Ipod/Iphone fan or even an apple fan, but isn't Itunes it?

No that's computer to iPod

I think the best way is to use a USB cable, or software. I'm not sure though.

USB cable then just make sure you can view hidden files and folders
