One that's really fucking enjoyable, like Oblivion, Morrowind, or even the Jak series. I heard Stalker was good. Any suggestions?

Fallout.
Witcher 1 and 2.
Kotor 1 and 2.
Overlord 1 and 2.
Jade Empire.
Fable 3?
ARMA 2.
The Guild 2.

These are a bit harder but are pretty awesome once you get good.
Dwarf Fortress.
Caves of Qud.
Project Zomboid.
Desktop Dungeons.

Oh btw, the guild 2 is good in sp, but it's great in mp IMO.
ArmA 2 is great in sp but even better with a few bros and the zombie mod Very Happy.

Those are all my favorites, except for fable.

Stalker is fan-fucking-tastic. Honestly, I've never been more immersed in a game than Stalker. It's excellent when you have a great computer too.

I'd advise playing in this order:
Shadow of Chernobyl with Stalker Complete 2009 mod, vanilla has bugs out the ass and C2k9 makes it look a lot nicer too.

And even if you don't like that, try Call of Pripyat (vanilla). CoP is pretty different from SoC. For one, there are only 3 large maps as opposed to many small ones. Additionally, the game looks fantastic and has a minimal amount of bugs in comparison on vanilla. Many people who don't like the other stalker games enjoy the fuck out of CoP. Fuck, everybody likes CoP, but it's better if you play after SoC story-wise.

And if you enjoyed the shit out of both of those and were fine with dealing with the bugs of SoC (yes, even Complete 2k9 has plenty of bugs), try Clear Skies with the Clear Skies Complete mod. Literally, without it the game is damn near unplayable. In fact, even with the mod Clear Skies is still so god damn bugged that they included an in-game trainer-like thing that you're only supposed to use to work yourself around the game-breaking bugs. For instance, there was once where there was a fight where you're on the other side of a bridge shooting at the guys on the other side, and they keep coming out of this door, but one or two gets stuck in a wall and after the whole fight is over, you have to edit your coordinates to get over to the other side of the bridge (which you can't cross yet) and shoot this guy that's stuck in a wall (took me ~30 minutes to figure it out after I restarted the battle twice).
But honestly, the gameplay of Clear Skies was by far my favorite, and made it soooo worth it. There are two huge battles which are awesome, and then you fight yourself through a city with one of the factions (Freedom if I remember correctly) taking cover and taking out Monolith trash. Ending leaves something to be desired, but the rest of the game is fantastic.

Links to CS and CoP complete near the bottom of that page as well. I suppose you can get CoP Complete too if you have a strong enough computer. It looks like it only has graphical modifications.
